Pan fried and oven baked duck breast...
1) Make sure that the duck breast has reached room temperature right before cooking it. Preheat the oven to 359°F (180°C).
2) Score the fatty white skin of the duck breasts with a sharp knife. Season them pepper and salt.
3) Place a non-stick frying pan over high heat. Place the duck breasts in, skin side down. Pan sear the duck breasts for 5 minutes. Then flip them over and take the pan off the heat.
4) Drizzle the melted duck fat on top of the duck breast. Then put the duck breasts skin side up in an oven dish. Add the rest of the baking juices.
5) Place the duck in the preheated oven for 8 to 12 minutes (depends on how you like your duck cooked on the inside).
