Ingredients

  • 1 ⅔ lbs Brussels sprouts (750 g)
  • 6 oz salted bacon (170 g), sliced
  • 1 tsp garlic chopped
  • 2 tsp olive oil
  • nutmeg
  • pepper
  • salt

Instructions

  1. Trim and clean the sprouts. Rinse and let them drain on a dry and clean kitchen towel. Then cut them in half lengthwise. Fill a large pan with water. Season with salt. Place it over medium-high heat. Once boiling, add the sliced sprouts.

  2. Gently blanch the sprouts in the hot water for 3 minutes, not more. Remove them from the heat, drain the sprouts and immediately refresh them under cold running tap water to stop the cooking process. Then put them in the fridge to cool for 5 minutes.

  3. In the meantime chop up the bacon slices. Put a large non-stick pan over medium heat and add the diced bacon, olive oil and garlic.

  4. Cook the bacon for 5 to 6 minutes until crisp. Stir regularly. Season with a pinch of pepper and nutmeg. Then add the blanched sprouts (cut side down to give them a gorgeous brown sear).

  5. Add extra olive oil if necessary. Let the bacon and sprouts cook for another 3 minutes. Shake the pan regularly. Check the seasoning and add extra pepper, nutmeg or salt to taste if necessary.

  6. Then transfer the sprouts and bacon to bowls or put them on a serving dish. Serve hot.
