    I love classic autumn style side dishes.

    Preferably with autumn and winter vegetables. Like parsnips, savoy cabbage… And brussel sprouts! Not that I can’t find brussel sprouts in the spring or the summer. On the contrary. However I prefer to buy and prepare them when the days are getting shorter and colder.

    As a kid I hated them.

    I tried to play every trick in the book so that I wouldn’t have to eat them. Which didn’t work because we always had to finish our plates, no matter how long you had to sit at the dining table.

    It is funny though.

    I think I would have eaten them without any problem if there would have been bacon with it. Unfortunately I grew up in a vegetarian family. And so bacon was a no no. Which turned the sprouts into no nos as well, ha!

    It is amazing how both bacon and brussel sprouts go so extremely well together!

    Brussel sprouts are fantastic, in fact I bought some yesterday.

    I bought them at my local supermarket and happened to taste one of them after blanching. How overly sweet, tasty and creamy they are this year!! You hardly have to cook them, so overwhelming they are in flavor. I mean it, don’t cook the sprouts until they are totally mushy and grey.

    Keep them crunchy and appetizing!

    That is all I can say.

    Brussel sprouts with bacon, that seems the be the only way for some to eat sprouts without gagging… Pity because these little green diamonds deserve a much better reputation!

    Ingredients
    • 1 ⅔ lbs Brussels sprouts (750 g)
    • 6 oz salted bacon (170 g), sliced
    • 1 tsp garlic chopped
    • 2 tsp olive oil
    • nutmeg
    • pepper
    • salt
    Instructions
    1. Trim and clean the sprouts. Rinse and let them drain on a dry and clean kitchen towel. Then cut them in half lengthwise. Fill a large pan with water. Season with salt. Place it over medium-high heat. Once boiling, add the sliced sprouts.

    2. Gently blanch the sprouts in the hot water for 3 minutes, not more. Remove them from the heat, drain the sprouts and immediately refresh them under cold running tap water to stop the cooking process. Then put them in the fridge to cool for 5 minutes.

    3. In the meantime chop up the bacon slices. Put a large non-stick pan over medium heat and add the diced bacon, olive oil and garlic.

    4. Cook the bacon for 5 to 6 minutes until crisp. Stir regularly. Season with a pinch of pepper and nutmeg. Then add the blanched sprouts (cut side down to give them a gorgeous brown sear).

    5. Add extra olive oil if necessary. Let the bacon and sprouts cook for another 3 minutes. Shake the pan regularly. Check the seasoning and add extra pepper, nutmeg or salt to taste if necessary.

    6. Then transfer the sprouts and bacon to bowls or put them on a serving dish. Serve hot.
