The minute the first rays of summer sunshine start to appear, that is my sign to make my easy tomato salad recipe with burrata again. This is a sunny classic here at home!

Are you a fan?
I could literally eat buckets of that stuff. I am not a fan of mozzarella in cold dishes such as salads. However burrata makes my heart rate go up.
That creamy heart inside of that white cheese ball is pure lushness.
Expensive?
Does a good burrata have to be expensive?
No, not at all.
I buy mine at a cheaper supermarket here in Europe, called Aldi.
Let me check how much I pay for it: 1,69 euros for a 125 gram ball of creaminess.
In other words: 1,90 USD for 5 oz.
I tried many burrata cheese before, from well known and more expensive brands too. But the richness and the creaminess I find in the burrata from Aldi for me is perfect.
And it is cheap, so win win!
Tomatoes
Get a good quality tomato for this recipe with burrata as well.
I could eat burrata all year long. However finding the right and ripe tomatoes is more of a challenge. In June, one of our favorite vegetable farmers at the Saturday farmers market always brings us produce from the Southern region in France called La Provence.
Big blushing tomatoes of all colors and shapes. This time not for a sweet price though, however one is enough to prepare a feast.
A gourmet supermarket here in town as well called Cru also sells Provence tomatoes, so that is our backup when we don’t find any at the farmers market for some reason.
Pesto, tomatoes and burrata
These ingredients are just made for each other.
I often make my own fresh basil pesto for this recipe.
I used fresh lovage for this salad, however practically every green fresh herb will do. Serve this tomato salad recipe with burrata with grilled bread on the side.

Easy Tomato Salad Recipe with Burrata

A true summer classic, gooey burrata with sun kissed tomatoes and a pesto dressing!
- 2 balls burrata cheese about 4 oz each (100 g)
- 4 large ripe tomatoes sliced
- a handful fresh herbs (I used lovage)
- 4 tbsp good quality olive oil
- 2 tbsp basil pesto
- pepper
- salt

1. Rinse the tomatoes well. Slice or chop them up (whatever you prefer for this salad). Divide the tomatoes over deep plates.

2. Combine the basil pesto and the olive oil in a small cup. Season with pepper and salt to taste.

3. Place a ball of the burrata on top of the 4 plates of tomato salad.

4. Drizzle with the pesto olive oil.

5. Garnish with the fresh basil. Finish with extra pepper and salt to taste to taste. Serve cold.
