Ingredients

  • 10,5 oz red sweet potatoes (350 g)
  • 10,5 oz white sweet potatoes (350 g)
  • 3,5 oz feta cheese (100 g)
  • a handful fresh parsley chopped
  • 1 tsp dried herbs
  • garlic powder
  • olive oil
  • pepper
  • salt

Instructions

  1. Peel the sweet potatoes. Dice them finely. Add them to a mixing bowl. Sprinkle the potatoes with the olive oil and dried herbs. Season with pepper, salt and garlic powder.

  2. Stir the potatoes well. Heat up a large and dry frying pan over medium heat. Then add the sweet potato.

  3. Stir fry the potatoes for 15 minutes. Then take the pan off the heat. Let the potatoes cool down. Once cooled, crumble the (feta) cheese. Add it to the bowl with half of the chopped parsley.

  4. Stir well. Check the seasoning. Add pepper or salt to taste. Transfer it all to an oven dish.

  5. Bake the potatoes in a preheated oven at 400°F (200°C) for 1 hour. Serve hot.
