Prawn Head Soup with Soba Noodles

Ingredients

  • 8 to 10 raw prawn heads and shells
  • 4,5 oz dry soba noodles (125 g)
  • 4 cups water (960 ml)
  • 1 small fresh tomato chopped
  • 1 large garlic clove peeled
  • ¼ fish bouillon cube
  • small chunk fresh ginger
  • 1 tsp tomato paste
  • ½ small shallot peeled
  • 1 star anise
  • ½ tsp chili powder or chili paste
  • salt

Instructions

  1. Insert the MultiBlade into the bowl and add the prawn heads and shells, water, tomato, garlic, fish bouillon cube, ginger, tomato paste, shallot and star anise. Season with a good pinch of pepper.

  2. Close the lid and remove the measuring cup. Select BOIL P1 and press Start to activate the program. After that, press cancel to exit the keep warm mode. Remove the lid and let the mixture cool down a little for 10 minutes.

  3. Then put the lid back on and place the measuring cup back. Press Pulse for 30 seconds and blend the prawn soup until all of the ingredients are turned into a fine pulp. Pour the prawn soup through a large and fine sieve (you can place a cheesecloth in it as well) over another large casserole and gently stir the soupy pulp until you end up with a slab of shrimp pulp. Press it well using the back of a spoon to get as many liquid out of it as possible.

  4. Discard the pulp. Rinse the Cook Processor bowl and replace the MultiBlade with the StirAssist. Pour the sifted prawn soup back in. Check the seasoning and add extra chili powder or paste and fish bouillon to taste if necessary. Set the timer at 5 minutes and select 100°C. Press start. Once the soup is warm, press cancel to exit the keep warm mode. Add the soba noodles.

  5. Let them soak in the soup for 3 minutes or until tender. Then scoop the noodles and prawn head soup into large bowls. Serve hot.
