Gooey grilled brie sandwich with Italian mortadella, freshly chopped celery and sweet grapes... I can assure you lunch doesn’t have to be boring at all!
1) Slice the ciabatta rolls in half and grill the 4 pieces of bread for a couple of minutes under a hot grill until a little crisp and golden.
2) Top 2 of the grilled breads with the mortadella and the sliced brie. Sprinkle with a little pepper and salt. Grill the sandwiches under the hot grill again until the cheese starts to melt nicely.
3) In the meantime slice the fresh celery and the grapes into bite-size pieces.
4) Once the brie has melted, remove the sandwiches from the grill and garnish both with the fresh celery and grapes. Finish with a last sprinkle of pepper and some fresh parsley. Cover with the remaining grilled bread.
5) Serve warm.
