Ingredients

Chicken

  • 2 chicken breasts pounded thin
  • 1 egg
  • 4 tbsp plain flour
  • 6 tbsp - 6 tbsp breadcrumbs regular or panko
  • 3 tbsp grated parmesan
  • olive oil for frying
  • 2 slices mozzarella or ½ cup §60 g) shredded mozzarella

Tomato Sauce

  • 1 tbsp olive oil
  • 1 small onion chopped
  • 1 cloves garlic minced
  • 1 cup passata (240 g) or tomato sauce
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • pinch of sugar optional
  • pepper
  • salt

Instructions

Make the tomato sauce

  1. Heat olive oil in a small saucepan. Add onion and garlic and cook until soft. Stir in passata, oregano, basil, salt, pepper, and a pinch of sugar. Let it simmer for 10 minutes.

Prepare the chicken

  1. Season the chicken with salt and pepper. Set up three bowls: one with flour, one with beaten egg, and one with breadcrumbs mixed with parmesan. Dredge the chicken in flour, then egg, then breadcrumbs, pressing gently so the coating sticks.

Fry the chicken

  1. Heat a generous splash of olive oil in a skillet. Fry the chicken for 3–4 minutes per side until golden and crispy.

Add sauce and cheese

  1. Spoon some tomato sauce over each piece of chicken and top with mozzarella. Cover the pan for 2 minutes until the cheese melts.

Serve

  1. Plate the chicken with extra sauce on the side and finish with fresh basil or parsley if you like.
