Deep Fried Shrimp in Nacho Crust

Ingredients

  • 12 king prawns peeled and deveined
  • 5,5 oz nachos (155 g)
  • 1 small egg
  • 1 tbsp olive oil
  • cup plain flour (80 g)
  • cup whole milk (80 ml)
  • frying oil
  • pepper
  • salt

Instructions

  1. Add the nachos to the bowl of the KitchenAid Stand Mixer Mini and then add the wire whip. Lower the mixer head and set speed 4. Mix for 2 minutes until the nachos are crumbled. Then turn the speed off and pour the crumbled nachos in a small bowl or deep plate.
  2. Add the egg, the olive oil, the flour and the milk to the bowl of the Stand Mixer. Season with a pinch of pepper and salt. Then lower the mixer head again and set speed 6. Mix for 4 minutes until you get a well combined and smooth batter. Then tilt the mixer head up again and remove the wire whip.
  3. Make the shrimp straight by running a metal or wooden skewer along their spine. Then dip the shrimp in the batter first and then in the crumbled nachos. Fry the prawns in hot frying oil for 30 seconds until the crust is golden brown. Serve hot.
