Ingredients

  • 1¾ lb pumpkin, peeled and cut into chunks (800 g)
  • 2 tbsp unsalted butter
  • 2 to 3 tbsp warm milk or heavy cream (optional)
  • salt
  • pepper

Instructions

  1. 1) Preheat the oven to 400°F (200°C).

  2. 2) Spread the pumpkin chunks in a single layer on a baking sheet.

  3. 3) Roast for 35 to 40 minutes, or until the pumpkin is fork-tender and lightly caramelized around the edges.

  4. 4) Transfer the roasted pumpkin to a food processor or large mixing bowl.

  5. 5) Add the butter and blend or mash until smooth.

  6. 6) Stir in the warm milk or heavy cream, if using, until the puree reaches your desired consistency.

  7. 7) Season with salt and black pepper.

  8. 8) Serve immediately while warm.

Recipe Notes

  • Roasting the pumpkin concentrates its flavor and creates a richer puree than boiling.
  • Sugar pumpkin, pie pumpkin, Hokkaido pumpkin, kabocha squash, and butternut squash all work well.
  • For an extra silky texture, process the puree for an additional minute after blending.
  • This recipe can be made up to 2 days in advance and reheated before serving.
