
1) Add the onion, garlic, chili, and a splash of olive oil to a large pan. Set it over medium heat and cook for about 5 minutes until the vegetables soften. Add the chopped bell peppers and cook for another 3 minutes.
2) Add the ground beef and stir well, breaking up any large chunks. Cook for 7 to 10 minutes until the meat is browned. Season with cumin, coriander, salt, and pepper.
3) Pour in the canned tomatoes and black beans. Stir everything together, then increase the heat until the chili reaches a boil. Lower the heat, cover the pan, and let it simmer gently for 1 hour. Check occasionally to make sure it doesn’t stick, adding a splash of water if needed.
4) Taste and adjust the seasoning with extra cumin, coriander, salt, or pepper. Remove the chili pepper. Let the chili rest for 10 minutes before serving so the flavors settle.
5) Serve hot with your favorite toppings like cheddar, sour cream, raw onion, cilantro, or guacamole.
