Delicious Italian simplicity at its very best: my classic spaghetti in marinara sauce with fresh tomatoes, garlic and onions...
1) Cook the spaghetti in boiling salted water until it is al dente. In the end keep 1 cup of the cooking water aside for later. Drain the pasta.
2. Gently fry the garlic in the olive oil in a non-stick pan over medium heat.
3. Stir in the tomato passata and shredded basil. Also add the sugar and bay leaf. Add salt and pepper tto taste.
4. Put a lid on the pan. Simmer the tomato sauce simmer over low heat for 30 minutes. Stir regularly.
5. Remove the bay leaf. Add the spaghetti to the sauce. If the sauce is too thick, add some of the hot pasta water you kept aside. Mix well to coat evenly.
Divide the spaghetti over plates and enjoy!
