Ingredients

  • 10,5 oz frozen artichokes (300 g), thawed
  • 1 small shallot
  • 1 small garlic clove
  • 2 tbsp toasted sesame oil
  • 1- inch fresh ginger (2,5 cm)
  • 1 tbsp oyster sauce
  • 3 tbsp fresh cilantro chopped
  • 1 tsp fish sauce
  • 1 tsp sesame seeds
  • pepper

Instructions

  1. Slice the thawed artichokes in half and let them drain a little on some kitchen paper for 5 minutes. This will remove any excess water and make the artichokes fry easily.

  2. Peel the shallot, the garlic clove and the piece of fresh ginger. Chop them all up. Then add this together with the sesame oil, oyster sauce and the artichokes to a large non-stick frying pan. Season with a pinch of pepper

  3. Place the pan over medium-high heat until the oil is hot and fry the artichokes golden for about 6 to 7 minutes. Stir regularly. Then drizzle with the fish sauce and a tablespoon of water. Also add the freshly chopped cilantro.

  4. Stir the artichokes well and reduce the heat to medium. Cook the artichokes for 4 more minutes. Then check the seasoning and add extra pepper or fish sauce to taste if necessary. Transfer the artichokes to a serving bowl or plate and sprinkle with the sesame seeds. Serve hot.
