Here is a chunky white chicken chili recipe with white beans, lime and sweet potato! What a great alternative for the classic black beans and meat mince chili con carne!
I bumped into a white chicken chili recipe some time ago.
And I had honestly never heard of such thing before. I think that it was on Google+ where I followed great food bloggers.
Unfortunately that social platform ceased to exist. But no worries, loads of those food bloggers switched to or already had an account on Twitter.
White Beans & Shredded Chicken
So one of them posted this white chicken chili again. And I recognised it immediately.
Does it sound weird?
Well I can assure you that it makes total sense though.
Instead of the classic black beans I used white beans. And I replaced the minced pork by shredded chicken breast. So this take on a classic chili con carne is a paler version. Hence the name, white chili.
But if we talk flavor this is as good as the classic chili con carne!
It goes without saying that you can prepare this white chicken chili in a crockpot, instant pot and slow cooker of course!
Easy White Chicken Chili Recipe with Sweet Potato
I also added sweet potato.
Because it just goes well with this subtle bean and chicken stew. Don’t forget to add a few drops of lime or lemon juice in the end right before serving. It brightens the chili up beautifully.
What I like about this meal is that it kind of resembles a soup. It is a lot more liquid than a chili con carne. We like a good and filling wholesome soup for dinner. Make this chicken stew as spicy as you want. I added just one jalapeño pepper.
You can of course add more if you like!
I prepared it on the stove, but I’m sure that you can pull this recipe also off in a crockpot.

Easy White Chicken Chili Best Recipe

Here's a chunky white chicken chili recipe with white beans, lime and sweet potato instead of the classic black beans and meat mince!
- 1 lb fresh chicken breasts (450 g), diced
- 3 cups chicken stock (720 ml)
- 1 cup whole milk (240 ml)
- 10,5 oz canned white beans (300 g)
- 10,5 oz red sweet potatoes diced
- 1 small onion
- 4 garlic cloves
- 1 jalapeño pepper
- 1 tbsp ground cumin
- ½ tsp paprika powder
- 1 tsp dried oregano
- olive oil
- chili powder
- salt

Peel, trim and dice the onion, jalapeño and garlic. Pour a little olive oil in a high pan and place it over medium heat. Then add the onion, jalapeño and garlic.

Stir fry the vegetables for 3 minutes. Add the diced chicken, the cumin, the dried oregano, paprika powder and a good pinch of salt and chili powder.

Then add the dices sweet potato, the chicken stock and the milk.

Bring this all to a boil and then simmer the chicken in the soup for 20 to 25 minutes until the sweet potato is soft. Then add the canned white beans.

Cook for another 10 minutes. Check the seasoning and add extra salt or chili powder to taste. Scoop the chili into bowls. Serve immediately.
