    Tuna is very cheap here in Tenerife because there is plenty of it.

    And this fish is perfect for a stew like this Spanish marmitako! Add potatoes, bell pepper and tomatoes as well. It is such a simple stew to prepare, all you need is one hour!

    Easy Marmitako (Spanish Potato Fish Stew)

    It is also a dish that can be easily adapted to your taste, by adding more or less spice or using different kinds of fish or vegetables.

    Hang on a minute.

    It is not exactly the popular red tuna that I am using here for this stew.

    The tuna that I use is a browner version that is called bonito and is from the tuna family. Last time the hubs bought a whole bonito at our local supermarket, had it cleaned, chopped up and filleted: he paid about 6 bucks I guess.

    A bargain, I know. I do keep the red tuna for more delicate recipes like tataki or sushi.

    It would be a shame I think to add it to stews.

    Better eat it raw or quickly pan fried!

    You can also add any other type of fish, as long as they keep their shape once stewed. Hake and mackerel are perfect as well.

    Spanish marmitako tuna stew with potatoes, bell pepper, paprika and tomatoes... Super easy to prepare and ready in under one hour!

    Ingredients
    • 1 lb fresh tuna (450 g), or hake
    • 3 cups fish stock (720 ml)
    • ½ 720 ml onion chopped
    • ½ green bell pepper chopped
    • ½ red bell pepper chopped
    • 3 large garlic cloves chopped
    • 3 medium potatoes
    • 7 oz canned chopped tomatoes (200 g)
    • a handful fresh parsley chopped
    • smoked paprika powder
    • pepper
    • salt
    Instructions
    1. Peel and chop the potatoes. Add them to a large high pan together with the chopped onion, garlic, fish stock and canned tomatoes. Season with a good dash of pepper, salt and smoked paprika.

    2. Put the pan over high heat until boiling. Then turn the heat lower and put a lid on the pan. Cook the potatoes until nearly tender. Chop the fish into bite-size bits and add it to the potato stew. Also add the chopped bell pepper.

    3. Stir and cook the fish for 8 to 10 minutes until cooked through. Stir well again and then put the lid back on the pan. Simmer the stew for another 10 minutes. Add extra fish stock or water if necessary. In the end check the seasoning and add extra pepper, paprika or salt to taste if necessary. Stir in the freshly chopped parsley.

    4. Then scoop the fish stew onto deep plates and serve hot.

    Because there is no better way to make stews at home.

    So then next up: marmitako, or a Spanish fish stew with tomatoes, potatoes and bell peppers.

    Can’t you find fresh tuna around where you live? Don’t worry, you can use fresh mackerel instead, or any other type of fish that doesn’t fall apart while cooking and stewing. Monkfish for instance also works great in combination with tomatoes, potatoes and bell pepper!

    Servings: 4 persons

    Ingredients

    • 1 lb fresh tuna (450 g), or hake
    • 3 cups fish stock (720 ml)
    • ½ 720 ml onion chopped
    • 3 large garlic cloves chopped
    • ½ green bell pepper chopped
    • ½ red bell pepper chopped
    • 3 medium potatoes chopped
    • 7 oz canned chopped tomatoes (200 g)
    • a handful fresh parsley chopped
    • smoked paprika powder
    • pepper
    • salt

    Instructions

    1. Add the StirAssist to the bowl of the Cook Processor. Then add the chopped onion, the garlic, the fish stock and the canned tomatoes. Season with a good dash of pepper, salt and smoked paprika.
    2. Close the lid and remove the measuring cup. Select STEW P11. Press Start to activate the program. After Step 1: chop the fish into bite-size bits and add it to the potato stew together with the chopped bell pepper.
    3. Close the lid and press Start to activate Step 2. Once the program is finished, press cancel to exit the keep warm mode. Then check the seasoning and add extra pepper, paprika or salt to taste if necessary.
    4. Add the freshly chopped parsley, close the lid and press Quick Stir for 5 seconds. Scoop the marmitako fish stew onto deep plates and serve hot.
