You certainly must have heard of it before.
Cinco de Mayo
It’s a pretty popular dish right around Cinco de Mayo.
I know. This one is far more heavier and also higher in calories that my other light mediterranean style vegetable dips. No need to tell you that I guess. But I do make this cheese dip very often though, especially when I crave something cheesy and naughty.
And besides, I have a couple of very big chili con queso fans here at home as well.
We love it!
Easy Chili Con Queso Dip Recipe
It’s a fairly easy recipe though.
Melted cheeses, a dash of chili powder, a handful of fresh bell pepper to add some extra crunch and color to it as well. The whole lot is ready in about 15 minutes!
The cheese dip goes well with crunchy nachos, breadsticks or grilled garlic bread.
Place the queso bowl in the middle of the table and let everyone serve himself. Or do it the quick and easy way: spread the tortilla or nacho crisps on a very large serving plate and just drizzle the queso on top of it.
Queso & Nachos
Garnish with grated cheddar cheese, extra chili powder, bell pepper and fresh cilantro. And dive in.

Easy Chili Con Queso Dip Recipe

- 7 oz cream cheese (200 g)
- 4,5 oz cheddar cheese (125 g), grated
- 2 tbsp onion finely chopped
- 1 small garlic clove finely chopped
- 1 tbsp fresh chives finely chopped
- a handful green bell pepper finely diced
- 1 tsp chili powder
- 1 tbsp unsalted butter
- salt

Add the butter to a saucepan together with the chopped garlic and onion. Then season with a pinch of the chili powder and salt.

Place the pan over medium heat and let the butter melt. Cook the garlic and onion for 4 to 5 minutes until soft and browned nicely. Stir regularly. Then add the cream cheese.

Turn the heat a little lower and let the cream cheese melt gently. Then add the grated cheddar cheese and finely diced green bell pepper.

Stir well. Simmer the ingredients until the cheddar cheese has fully melted. Add the rest of the chili powder and the chopped fresh chives.

Stir well. Then check the seasoning and add extra salt or chili powder to taste if necessary. Pour the cheese dip in a clean bowl and serve lukewarm.
