    Hamburger steaks, anyone?

    I love to make my own burgers and meatballs whenever I see a load of minced meat on sale in my supermarket. India my case, it is hard to say no to bargains like that. And nope, that’s not an impulse purchase at all. Because we eat quite a lot of minced meat here.

    Pork, beef, veal, chicken or a mixture of them, it doesn’t matter.

    Minced Meat

    Here at home we have a weakness for minced meat dishes.

    A classic spaghetti sauce for instance! Spaghetti and spaghetti tomato sauce are on our menu at least twice a month. And so are a bunch of meatball recipes, a classic meatloaf, hamburger soups, oven bakes like moussaka and so on.

    So often I will come home with a heap of minced meat.

    What to do with it?

    Well I season it first. Then make even portions, patties or roll the minced meat into meatballs. And I just freeze them for later, always with a date tag on it. And what a great last minute dinner this makes!

    Anyway, here’s a simple burger steak with a good old onion gravy.

    I usually serve it with golden fries and a crisp green salad on the side as well.

    Ingredients
    • 12,5 oz ground beef (350 g)
    • 1 tsp garlic paste
    • 1 tbsp panko (breadcrumb)
    • 2 tsp parmesan cheese grated
    • 1 medium onion sliced
    • 1 cup beef stock (240 ml), warm
    • 2 tsp worcester sauce
    • 1 tsp cornstarch or sauce thickener
    • 3 tbsp unsalted butter
    • pepper
    • salt
    Instructions
    1. Add the beef mince, garlic paste and a good sprinkle of pepper and salt to a large mixing bowl. Knead or stir the mince well. Then add the grated cheese and (panko) breadcrumbs.

    2. Knead well again. Taste the mince and add extra pepper or salt to taste. Then divide the meat mince into 2 even portions, make thin patties. Place a piece of cling film on top of them and put them in the fridge to chill for about 30 minutes.

    3. Add 2 tablespoons of the butter to a large non-stick pan and place it over medium-high heat until melted. Then add the hamburgers. Cook them for about 5 minutes until nicely browned. Then flip the burgers over and fry their uncooked side.

    4. Remove the burgers from the pan (don’t wipe the pan clean) and place them on a clean plate. Cover with a piece of tinfoil to keep them warm. Add the remaining butter to the same pan you baked the burgers in and place it over medium-high heat until melted. Then add the sliced onion.

    5. Gently fry the onion for about 10 minutes until it's nicely browned. Stir regularly. Then add the warm beef stock and worcester sauce. Season with some pepper and salt. Let the beef stock reduce by half and stir in the sauce thickener or cornstarch. Check the seasoning and add extra pepper or salt to taste. Then place the cooked hamburger steaks back into the pan on top of the onion sauce.

    6. Cover the pan, turn the heat low and cook for another 4 minutes until the burgers are warmed through. Then take the pan off the heat. Place the burgers onto plates. Drizzle with onion gravy. Serve hot.
