Carrot Pumpkin Soup with Ham & Cheese Sandwiches
I love the pumpkin in this recipe.
Because it gives the soup the necessary creaminess without you having to add any butter or cream to it. Pumpkin is a really lovely vegetable. I use it very often in my kitchen since I can find it here all year around.
It is surprising in how many recipes you can use fresh pumpkin!

Easy Carrot Pumpkin Soup Recipe

Silky smooth carrot pumpkin soup spiced with cloves and cinnamon, served with crunchy toasted ham sandwiches... perfection!
- 2 cup water (480 ml)
- 7 oz fresh carrots (200 g), diced finely
- 7 oz fresh pumpkin (200 g), diced finely
- 2 tbsp onion diced finely
- 2 medium garlic cloves diced finely
- a pinch of ground cinnamon
- 4 slices toast bread
- 2 slices cooked ham
- 2 slices cheese
- 1 tbsp olive oil
- 2 cloves
- nutmeg
- pepper
- salt

Add the finely diced carrot, the pumpkin, the garlic and onion to a large and high pan.

Then add the water, the olive oil and the clove as well. Season the ingredients with a good dash of nutmeg, pepper and salt.

Place the pan over medium-high heat until boiling. Then put a lid on the pan and boil the ingredients for about 20 minutes until it is all tender and soft. (You can prepare the ham sandwiches in the meantime.) Once cooked, take the pan off the heat and blend or mix the ingredients until you end up with a very soft and smooth. Add extra water to the soup if necessary.

Check the seasoning of the soup. Add extra pepper, nutmeg or salt to taste if necessary. Then scoop the hot carrot pumpkin soup into bowls and sprinkle with the pine nuts and a tiny pinch of ground cinnamon. Serve the soup piping hot together with grilled ham sandwiches.

Nothing more, nothing less.

- 2 cup water (480 ml)

Insert the MultiBlade into the bowl. Then add the diced carrot, the pumpkin, the garlic and the onion.

Close the lid. Press Pulse for 10 seconds. Open and scrape down the sides of the bowl. Close the lid again and press Pulse for another 5 seconds. Then add the water, the olive oil and the clove. Season with a good dash of nutmeg, pepper and salt.

Close the lid. Select BOIL P1 and press Start to confirm. (You can prepare the ham sandwiches in the meantime.) Once the program is finished, press cancel to exit keep warm mode. Press Pulse for 10 seconds. Scrape down the sides of the bowl and check the seasoning of the soup. Add extra pepper, nutmeg or salt to taste if necessary.

Close the lid and press Pulse for another 3 to 4 seconds. Then scoop the hot carrot pumpkin soup into bowls and sprinkle with the pine nuts and a tiny pinch of ground cinnamon. Serve the soup piping hot together with grilled ham sandwiches.
