Easy Smoked Salmon & Eggs au Gratin

    Eggs au gratin... ever thought of preparing this dish? Another recipe for if you got some leftover hard-boiled eggs in your fridge!Lush and creamy eggs au gratin… Not sure why I have never come up with this drop dead au gratin recipe. We often have a couple of hard-boiled eggs in our fridge.

    And here is why.

    Whenever I steam vegetables or fish, I usually add a few raw eggs to the steam basket and let them cook at the same time with the rest of the ingredients. Now that is an easy way to get cooked eggs for later!

    However sometimes I end up with too many of them.

    No worries because look here how you can turn them into a great lunch! Eggs au gratin, this dish sounds highly delicious already but I can also tell you that the combination with the smoked is just perfect.

    Gosh how I love that smoky smell once you pull that golden brown gratin from the grill…

    It is truly mouth watering! I made a very simple white sauce to top off the eggs and salmon with. And also a little sprinkle of cheese then to give this gratin some extra flavor and to make sure that gratin gets the perfect golden color on top it deserves.

    I will be making this gratin much more from now on!

    It is a great way to use hard-boiled eggs without making the classic egg salad for lunch.

    Ingredients
    • 3,5 oz smoked salmon (100 g), sliced
    • 1 cup whole milk (240 ml)
    • 3 to 4 hard-boiled eggs peeled
    • 1 tbsp unsalted butter
    • 1 tbsp plain flour
    • 3 tbsp fresh parsley chopped
    • 2 tbsp cheese grated
    • Old Bay seasoning
    • nutmeg
    • pepper
    • salt
    Instructions
    1. Slice the eggs in half. Shred the smoked salmon into smaller bits. Add both to a small baking dish. Sprinkle with half of the chopped parsley. Season with pepper and salt.

    2. Add the unsalted butter to a large saucepan. Season with pepper, salt and nutmeg . Place this over medium-high heat for 2 minutes. Then add the flour to the melted butter.

    3. Stir the flour and butter well. Let this mixture bake for another minute.

    4. Stir in half of the grated cheese. Gradually pour in the milk.

    5. Keep stirring the white sauce until it starts to thicken. Then take the sauce off the heat. Stir in the rest of the chopped parsley. Ladle the sauce on top of the eggs and smoked salmon in the baking dish.

    6. Sprinkle with the rest of the grated cheese. Grill the eggs for 6 to 8 minutes. The top should be browned nicely. Then remove the dish from the grill. Let it cool for 2 minutes. Divide the eggs and salmon over plates. Serve warm.

    • 3 to 4 hard-boiled eggs sliced
    • 1 tbsp unsalted butter
    • 1 tbsp plain flour
    • 3 tbsp fresh parsley chopped
    • 2 tbsp cheese grated

    Instructions
    1. Add the salmon and eggs to a small baking dish. Sprinkle with 2 tablespoons of the chopped parsley and a pinch of pepper and salt.

    2. Place the StirAssist in the bowl of the Cook Processor. Then add the butter and a pinch of pepper, salt and nutmeg. Close the lid. Manually set the temperature to 85°C and set the time at 2 minutes. Press Start.

    3. Then add the flour to the melted butter and close the lid again.

    4. Manually set the temperature to 130°C and set the time at 1 minute. Press Start. Then with the spatula stir the flour and butter a little. Add half of the grated cheese. Close the bowl and manually set the temperature to 130°C and set the time at 5 minute. Press Start. While the butter and flour is being stirred, gradually pour the milk through the opening in the lid.

    5. After that the sauce should be thickened but still somewhat runny. Sprinkle with the remaining chopped parsley.

    6. Turn the Cook Processor off, remove the lid and the StirAssist. Then ladle the sauce on top of the eggs and smoked salmon.

    7. Sprinkle with the remaining grated cheese. Grill the eggs for 8 minutes until the top has browned nicely. Then remove the dish from the grill and let it cool for 2 minutes. Divide the eggs and salmon over plates and serve warm.
