Fresh Cilantro
I bought this bunch of fresh cilantro at my local farmers market this weekend.
And let me tell you that a bunch is even an understatement. It is more like a huge green hay stack. And because I want to use everything of it before it goes limp I can always use recipes in which I can incorporate fresh cilantro for later use.
A huge batch of cilantro butter for instance.
And what you are not using in the near future you can easily freeze. I freeze butter quite often, it is such a waste to throw away food that you can use later!

Hey, you can replace the spices for the burger by a pinch of my homemade taco seasoning if you like. Or make it extra spicy
Do you need more recipe ideas to use your cilantro butter in?
Add a couple of tablespoons or of the fresh or frozen stuff to freshly cooked al dente spaghetti and let it melt into a delicious sauce. Look for instance what I did with my garlic butter spaghetti!

Or stir it into a vegetable risotto.
Or you can also place it on top of freshly grilled bell pepper, zucchini and/or eggplant. On grilled or baked fish! And juicy steaks.

Easy Chili Hamburger Steak & Cilantro Lime Butter Recipe

Look at that creamy cilantro lime butter melting on top of a homemade chili hamburger steak! This cilantro butter is so easy to make at home!
- 12,5 oz ground beef (350 g)
- a handful fresh cilantro
- zest of 1 lime
- 3 tbsp unsalted butter (very soft)
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp coriander powder
- olive oil
- salt

Chop the fresh cilantro up very finely and add it to a small mixing bowl together with the very smooth butter and the lime zest. Add a pinch of salt to it as well.

Then stir the butter and cilantro until well mixed. Place the butter back in the fridge for a couple of minutes until it is easier to shape it.

You can roll it into a sausage shape in some cling film or make quenelles or spread it in any mould you want.

Then place the butter back in the fridge to chill and set. In the meantime transfer the beef mince to a large mixing bowl and add the chili powder, ground coriander and garlic powder. Season with a pinch of salt.

Stir or knead the mince well. Then divide it into 2 even portions and shape it into hamburger patties.

Bake the hamburgers in a bit of olive oil.

Slice the cilantro butter or divide it into 2 pieces.

Once the hamburgers are golden brown on both sides and cooked on the inside place the cilantro butter on top of each steak. Turn the heat off and let the butter melt a little. Then transfer the hamburgers onto plates. Serve hot.
