Sure I get it.

Frog legs are not the most popular protein to cook with.

And I suspect that when I post this sauteed frog legs recipe on my social media later today that I will get quite a lot of mixed reactions.

But if there is one thing that I have learned over all the years of food blogging, is that I can’t please everyone at the same time.

That is a fact.

Frog Legs in France

But, this is a food blog.

About food that is delicious. And yes, I am an omnivore and will try and eat anything if I feel like it.

Frog legs are a delicacy in France, and in Belgium as well.

Some even say that the French were called ‘frogs’ long time ago because they would eat frog legs. A theory that others say is untrue.

But you can also find frog on the menu in other countries of course. In China for instance.

And quite a lot of other countries.

So eating frog is not just a French thing.

Even here in Belgium you can find frog legs on the menu.

Best Frog Legs Recipe in Garlic Butter

Although I have to admit that you find it less and less these days.

I found these frog legs in the freezer department in a big Belgian supermarket for my frog legs recipe.

I often get the question how frog legs taste like.

And I have to admit that frog legs taste like prawns. The texture of their meat reminds me of quail legs too.

So what is not to love about them!

For my frog legs recipe below I went for a very classic version. Plain and simply pan fried in a little oil and garlic butter.

A little sprinkle of pepper, salt and freshly chopped parsley in the end.

Excellent.

Breaded Frog Legs

If you like you can coat the frog legs in a little flour before you pan fry them to make them extra crispy.

If you are not certain about cooking with garlic butter, then you can use unsalted butter and a little mashed garlic instead.

Some cut the frog legs in half and pan fry them separately. I kept them in one piece, connected by the spine. It is up to you!

Ingredients
  • 10,5 oz frog legs (300 g), fresh or thawed
  • 3 cups milk or water (optional)
  • 1 tbsp olive oil
  • 2 tbsp garlic butter
  • 1 tbsp fresh parsley chopped
  • pepper
  • salt
Instructions
  1. 1. Let the frog legs soak in the milk in the fridge for an hour (optional).

  2. 2. Rinse the legs and pat them dry with kitchen paper.

  3. 3. Add the olive oil and half of the garlic butter to a large wok or frying pan. Place it over high heat until the butter starts to foam. Don't let it burn.

  4. 4. Add the frog legs to the pan. Pan fry them for about 10 minutes until they are golden brown on both sides. Turn the over regularly.

  5. 5. Add the rest of the garlic butter right in the end together with the freshly chopped parsley. Season with a pinch of pepper and salt to taste.

  6. 6. Divide the frog legs over plates. Serve with grilled bread and a green salad.

Do I have to soak frog legs in milk?

This ingredient might be controversial but it is also highly delicious!

You might have noticed in my frog legs recipe above that I soak the legs first.

Why?

I am not sure if there is any real proof to back it up, but apparently the milk makes the frog meat swell and therefore meatier. It also gives the meat a whiter color I think. And it is like soaking marrow bones: the milk extracts impurities such as blood and other body fluids.

Soaking frog legs is optional though.

Can you also soak the frog legs in water?

Sure!

I only use milk because my grandmother used to do that as well.

What happens if you don’t let the frog legs soak beforehand?

Nothing, don’t worry. You will not get sick. If you forget to do it or in case you just run out of time, you can still perfectly cook them. Rinse the frog legs, pat them dry with a little kitchen paper and pan fry them. Make sure they are cooked though.

Are frog legs considered seafood or meat?

Good question.

Amphibians, ever heard of them?

It is a group of animals that can live in water and on land at the same time if they want. Frogs are amphibians because they have lungs and breathe air – and at the same time they can survive in water. That is why they are not considered seafood or fish.

So I think it is fair to say that frog is meat.

Just like dolphins and whales, and do you call those mammals fish or seafood?

What does frog taste like?

Like I said before: frog legs taste just like prawns if you ask me.

I hear a lot of people say that cooked frog meat really tastes like cooked chicken meat.

The smooth texture of their meat reminds me more of quail legs instead of chicken.

The best way to know how frog tastes like, is to try it of course.

Is eating frog controversial?

Yes, quite controversial actually because some people consider it animal cruelty.

And that refers to the way frogs are bred, and killed. I am going to spare you the details.

It really depends what country you are in, in some countries adding frog meat to your meal as a normal way to eat healthy protein.

But I get that people get upset about eating frog meat.

Are all frog species good for consumption?

No, because some frogs carry toxins or other dangerous compounds in their flesh and that can be very harmful to humans if you eat that frog meat.

Do your research and your homework and check what frogs are safe to eat if you want to go forage for your own food or live in the wilderness and make my frog legs recipe for dinner!

On a whim I bought frog legs at my local grocery store because I’ve never had them and never even seen them for sale before. I’m excited to try this tomorrow!
