Homemade Pasta from Scratch

- 7 oz pasta flour (200 g)
- 2 egg yolks
- olive oil
- salt

Pour the flour in a blender. Add the egg yolks, a pinch of salt and a drizzle of olive oil.

Pulse well and add some more olive oil or a few drops of water until you get a moist dough. If the dough is too sticky, add more flour.

Pour the dough on a clean surface, sprinkle lightly with some flour and start kneading it for a few minutes. Wrap it in cling film and let the dough rest for at least 30 minutes at room temperature.

Sprinkle the pasta machine with flour. Cut the dough into 4 pieces. Wrap 3 of them again and put aside. Flatten 1 piece in the palm of your hand.

Dust the dough lightly and roll it through the pasta machine on the widest stand.

Fold and roll out again.

Repeat this a couple of times until the pasta sheet feels silky. After that, start making the dough thinner and thinner.

I go as far as stand 7 for ravioli and stand 8 for spaghetti or lasagna. Dust occasionally with some flour to avoid sticking. Cut in the shape you want. Keep the rolled out pasta under a clean but slightly moist kitchen towel while rolling out the rest of the dough. This will prevent it from drying out too soon.
Can I freeze homemade pasta?
Yes, you can freeze fresh pasta.
To do this, spread the pasta out on a parchment–lined baking sheet and freeze it until it is solid, then transfer it to an airtight freezer bag.
Frozen pasta can last up to 3 months in the freezer.
Be sure to cook the pasta directly from frozen.

You can, but you don’t have to dry homemade pasta before cooking it.
In fact, it is best to cook fresh pasta right away.

No worries, it does not have to be a hugh investment. I bought my pasta machine for only $15 bucks a couple of years back.
A very cheap pasta machine, but one that also works well.
If you are not sure about whether making homemade pasta is something you will really like and do very regularly, then I suggest that you also go for a cheaper machine.
Once you get the hang of it and you are absolutely in love with making your own fresh pasta at home, you can upgrade to a better one.
