    I love this shredded chicken and carrot noodle soup!

    KitchenAid Spiralizer

    The first day that it arrived in the mail, I just couldn’t wait to try it out. I started off by attaching whatever fruit or vegetable I could find laying around in my fridge and pantry.

    Same routine: I would set the speed low and just see what would happen with it. Learn, clean up and start again.

    And I can assure you that it is also a fun thing to watch!

    No need to tell you that you can’t slice or grate just anything because some things are way too soft or mushy to cut into thin ribbons.

    Stick to vegetable such as beets, carrots, potatoes and zucchini for instance. Tomatoes are also a bit of a disaster because they are too soft.

    And what about fruits then?

    Apples also work well. I think that I will be trying out kiwifruit and dragonfruit next week too!

    Stir Fries

    I kept the other ingredients in this carrot noodle and chicken soup very simple. You can also add carrot noodles to other vegetable soups, salads and even stir fries.

    Enough recipe ideas to keep me going for a while!

    Carrot Noodle Soup with Shredded Chicken

    Ingredients
    • 10,5 oz cooked chicken (300 g), shredded
    • 1 lb fresh carrots (450 g), peeled
    • a handful frozen green peas thawed
    • 2 cups chicken stock (480 ml)
    • 2 tbsp cream
    • 1 tbsp unsalted butter
    • garlic powder
    • 1 bay leaf
    • pepper
    • salt
    Instructions
    1. 1) Attach the carrots onto the vegetable skewer of your spiralizer. Trim the carrot if it is too large. Place a large bowl underneath it.

    2. 2) Select the medium spiral blade and attach it to the spiralizer.

    3. 3) Set the speed to 4. Once the first carrot is cut, turn off the speed and remove what’s left of the carrot. Attach another carrot and start again.

    4. 4) Add the butter, bay leaf and the carrot noodles to the bowl of the Cook Processor fitted with the StirAssist. Close the bowl.

    5. 5) Select BOIL P2 and press Start to activate Step 1.

    6. 6) Pour in the chicken stock and add the pulled chicken as well. Season with pepper, a pinch of garlic powder and salt.

    7. 7) Add the heavy cream. Close the bowl and press Start to activate Step 2.

    8. 8) Once the program is finished, press cancel to exit the keep warm mode. Add the thawed peas and close the bowl. Let the peas thaw in the hot soup.

    9. 9) Check the seasoning and add extra pepper or salt to taste if necessary.

    10. 10) Take the pan off the heat and scoop the soup into bowls.
