    Do you often prepare scallops at home?

    Fresh scallops are widely available here in Belgium. But I have to admit that they don’t often end up on our dinner table.

    And when they do, it is always in the summer.

    One of my favorite scallop recipes to prepare are my Vietnamese style scallops with butter, peanuts and spring onion. An idea that I picked up while traveling in Vietnam!

    Wet vs. Dry Scallops

    Cooking fresh scallops is easy.

    What I learned only recently is that there are two types of scallops: wet and dry scallops!

    Wet scallops are marinated in a water solution with sodium tripolyphosphate. That preserves them once the scallops are harvested at sea. Dry scallops on the other hand are not treated in this way.

    When I was assembling this scallop recipes roundup, practically every chef and blogger recommended using dry scallops. Apparently wet scallops can have a slight aftertaste.
